Hi everyone! I hope you’ve all had a very Happy Easter. It feels like ages since I’ve done a blog post. At the beginning of this year I planned on writing three posts a week. Two baking themed ones and one crochet/ craft one. March was very busy chez SmartCookieSam and we were away for two of the weekends. This didn’t stop me wanting to bake in my spare time and to create some Easter themed bakes. Unfortunately, time ran out and I never got round to writing the recipes up. Now it’s too late for this year but I will definitely get organised for next time!
So this post is a March/ Easter Bake Catch up and to show you some of the things I’ve made in the last few weeks when I’ve been unable to write a blog post.
You’ll have also seen my White Chocolate Malteser Bunny Slices post from a couple of weeks ago.

My Mint Chocolate Mini Egg Aero Bubbles Rocky Road was a great success and I enjoyed turning my favourite mint chocolate Aero Bubbles into a scrumptious no-bake chocolate treat.

I bought some M&M Mini Eggs to try out when I spotted them in my local supermarket the other week. I wanted to see how they compared to the Cadbury ones which I absolutely can’t get enough of. Of course we could have eaten them straight from the packet but I wanted to see what I could bake with them. I chose to add them to my usual flapjack recipe and oh my, were they so good!

I also found some Milky Bar Mini Eggs in my local village shop. I’ve eaten them before but not used them to bake with. I put them into my regular White Chocolate Blondie recipe and they came out so gooey and delicious. I will definitely make those again!

Brownies are always a massive favourite whatever time of the year. It’s always exciting to try out different flavours. I know it’s more mint but I truly am addicted to all things mint so I just had to buy some After Eight Mini Eggs and add them to some Brownies. The After Eight Mini Egg Brownies would be great as an Easter gift or to eat at an Easter Afternoon Tea.



This Terry’s Chocolate Orange Mini Egg Loaf was perfect for an Easter Tea with its rich chocolate orange frosting. The loaf itself was a chocolate orange sponge studded with Terry’s Chocolate Orange Mini Eggs. The remainder were put on top of the cake as decorations.

I had a packet of Haribo Jelly Bunnies and these made great toppings for my regular Empire Biscuit recipe making them a perfect Easter treat. As you may or may not know, Empire Biscuits are my absolute favourite bake ever and I can’t get enough of them. So any excuse to turn them into Easter Bunny Empire Biscuits!


It wouldn’t be Easter without Cadbury’s Mini Eggs or Cadbury’s Creme Eggs! So I just had to bake some Mini Egg Cookies. These are absolutely heavenly and I wish I had made more of them.



But I think my favourite bake of this Easter has to be this Creme Egg Chocolate Traybake complete with full size and mini size Creme Eggs along with some pretty pastel Springlike sprinkles.

It’s been a while since I’ve worked on my #100bakeschallenge as well as my Bundt book baking. I find it hard to get on with this if there’s nothing suitable to fit what I need to make or I’ve run out of time. I need to get back into this but I’m struggling at the moment and might need to take a break. Let’s see what happens!
